When bakery professionals travel for business they’re always on the look out for new ideas and bakery trends that might apply to their bakeries.
Mini pastries were the clear trend in Munich, Germany recently at the 23rd iba, an international trade fair for bakery, pastry and snacks. While the move toward smaller portion sizes has been a recent trend in food in the United States, the consumer preference for mini, in the form of pastries and single-serve desserts, continues to be strong in Europe as well.
“There were little pastries everywhere, even in the train stations,” said John Stricker, owner Practical Baker and Bakery.com founder. Stricker visited Munich to exhibit his company’s Rhodes Kook-e-King equipment at iba , which drew more than 1,300 exhibitors and 77,500 visitors from more than 170 countries. “The pastries are gorgeous. It’s part of the European culture. They expect quality bakery,” he said.
The next iba trade fair will take place Sept. 15-18 in Munich.
