With coffee as a natural complement to most bakery products, retail bakers should reassess their beverage offerings to ensure they are maximizing sales in the category and giving customers the thirst quenchers they desire. Coffee and cold beverages are too often an afterthought in many bakeries. When handled well, beverages are an easy way to raise sales per customer. The big chains know this and market their new beverage products heavily.
Mintel Group, a market research firm, shares four beverage trends for spring 2015. Dessert and cold pressed coffees continue as the hottest beverages this year. Consumers also are seeking beverages made with cane sugar instead of high-fructose corn syrup. The trend toward cane sugar as an ingredient could be promoted in bakery products as well.
